Back on July 29th, hope was renewed when the local establishment, which recently suffered a devastating loss when mid-construction it burned to the ground in 2020, reopened to diners on the bay. According to Drew DiFonzo, managing director for the Lighthouse restaurant, 2020 was a difficult year, however, a dedicated staff and team made it possible to overcome setbacks. The Lighthouse sits adjacent to key tourist and residential sites, including the Hyatt Place Dewey Beach, The Residences at Lighthouse Cove, the Lighthouse Cove Event Center and Dewey Beach’s Baywalk. The expansive wooden deck surrounding the Lighthouse sits in front of Rehoboth Bay, providing beautiful views and room for live entertainment. At the same time, the restaurant’s interior boasts an open-air feel and beachy vibe. Both great drinks and great seafood are on the menu, all purposed with a twist like the Lighthouse’s popular “Mexican street scallops” made with a grilled corn salsa, chipotle aioli, queso fresco, baby cilantro and a grilled lime vinaigrette. Street tacos also take on a Southwest fusion feel, featuring a choice of protein plus yuzu cabbage dressed with house pico de gallo, cheddar cheese and chipotle aioli.
